Self-contained with the components in one place, the refrigeration system uses R290 hydrocarbon refrigerant—an eco-friendly option—to maintain these temperatures. The condensing fan motor blows in reverse for 20 seconds each time the compressor is started. This helps to remove dust, dirt, and debris from the condensing coil. This prep table's top section holds eight sixth-size, 4"-deep polycarbonate pans, which are included, but if an operator wants to hold different pan configurations or deeper pans, this can be accomplished with adapter bars.
